Conversion of food and drink data to footprint

Get the footprint in kilograms of CO2-equivalents for a specified amount of calories or weight consumed for each food item

All inputs, outputs and defaults can be seen in the Convert food and drink technical API docs.

Inputs

This endpoint receives:

a list of food items
optionally, the amount consumed of each food item in units of kg or kcal (defaults to 1 kcal of the food item inputted)
optionally, a data source to base calculations on (defaults to Norway)
optionally, the date for which the footprint should be computed (defaults to today’s date)

Currently, Norway is the only valid data source for this endpoint.

Outputs

This endpoint returns, for each inputted food item:

footprint in kilos of CO₂e, rounded to grams
weight in kilograms

Categories

Level 1 and level 2 categories are taken from the food and drink calculator's output. Level 3 categories are taken directly from the Big Climate Database, and provide the finest level of detail, allowing for precise footprint estimates for specific food items. The level 2 category values are obtained by taking weighted averages of the level 3 categories, where the weights are based on the relative consumption of each of the level 3 categories, taken from the NORKOST dietary survey.

Calculations

To estimate the climate footprint of a food item:

Using calorie input: We multiply the number of calories (kcal) consumed by its corresponding emission multiplier (kg CO₂e/kcal) to calculate the footprint.
Using quantity input: If the quantity of food is entered in kilograms (kg), we first convert it to equivalent calories by using the food's caloric density (kcal/kg). Once the calorie amount is determined, we apply the emission multiplier to calculate the footprint in kg CO₂e, in the same way as for the calorie input.

The multipliers cover emissions from production, direct and indirect land-use change, processing, packaging, transport, and retail. They exclude emissions from food waste and any emissions from cooking the food.

Multipliers

The multipliers come from the Big Climate Database, which provides life cycle assessments (LCAs) for the carbon footprint of over 500 common food products along with their caloric densities. The carbon footprints are expressed in kg CO₂ equivalents (CO₂e) per kg of food (net weight) and are based on consequential LCAs, utilising a hybrid input-output analysis that combines two approaches:

Bottom-up Analysis: This method starts at the production level and builds up the supply chain to calculate total emissions for each food item.
Top-down Analysis: This approach begins with the aggregate emissions from agriculture and other sources, then breaks down the emissions contribution through each stage of the production process.

This dual approach provides a comprehensive emissions breakdown, including contributions from agriculture, indirect land use change (ILUC), processing, packaging, transport, and retail. The Big Climate Database contains data from Denmark, England, the Netherlands, France, and Spain. For our calculations, we currently use the Danish data due to its geographic relevance to Norway.

For dairy and beef related emission multipliers, we use data from AGRIBALYSE, a French agricultural and food consumption life cycle inventory (LCI) database. AGRIBALYSE includes LCIs for over 2,500 food products commonly consumed in France.

The choice to use AGRIBALYSE specifically for the dairy system arises from a methodological difference in how climate impacts are calculated. The Big Climate Database employs a consequential life cycle assessment (LCA) approach, which applies a "climate impact discount" to dairy products. This discount occurs because beef from retired dairy cows and their calves is considered to offset more climate-intensive beef cattle consumption on the global market, which leads to a lower than average climate impact. To avoid this indirect adjustment and obtain a more direct assessment of dairy’s climate impact, we rely on AGRIBALYSE data for dairy products.
